Breakfast is a new phenomenon to me. I always used to just grab a granola bar, a coffee, and go. But after studying nutrition, I realized that does nothing for my blood sugar regulation or my mood. I’d always end up grumpy and hungry by lunchtime. Now I try to incorporate something quick and easy, but nutritious, so I at least have something good in my stomach first thing in the morning. Chia pudding is one of my favourites, because I can prepare it the night before. As someone who likes to hit the snooze button, that’s ideal.

What you’ll need:
3 tbsp chia seeds
1/2 Plant Veda lassi (I prefer the mango flavour because of the added mango chunks, but pick your fave!)
1/2 (or more) or your favourite fruits and nuts
Mix together the chia seeds and lassi. Let sit overnight. In the morning add your fruits and nuts and you’re out the door! I was lucky to be able to pick some fresh strawberries from the garden.
Chia pudding is great for those of us who are plant-forward eaters as it contains a high amount of omega 3s, which are essential for good health. With the lassi it also contains probiotics to help start your digestion off right. I’m still not a large breakfast eater so this portion is on the smaller side, but feel free to double up the recipe.
